Ingredients
1/4 teaspoon dried rosemary or 1/2 teaspoon minced fresh
salt and pepper to flavor
1/2 pound Gruyere cheese, coarsely shredded
2 tablespoons butter
4 medium onions, thinly sliced
4 cups chicken broth
1 slice of bread

Instructions :

Melt the butter in a large saucepan. Add onions, fry slowly over a medium low heat, stir occasionally until onions are well cooked. Add chicken broth, rosemary and salt, and bring it to the boil. Cover and simmer over a low heat for 20 - 25 minutes. Add a slice of toast, with the cheese melted over the top, to the serving bowl.

Low Carb Noodles

Ingredients :

1 cup oat flour 12
1 cup vital wheat gluten flour 20
¾ cup wheat bran 12
1 cup flax seed (ground) 0
Enough water to get to the right consistency - thick like pie crust

Instructions :
Mix well and roll out. Use pasta machine to thin. Cut to size and shape desired or use machine to cut. Dry in preheated and turned off oven for about an hour. Cook about as you would regular pasta – taste for doneness. This recipe made enough lasagna noodles for 2 9 x 13 pans of lasagna.

Baked Quesadillas

This is a quick and delicious lunch or light dinner. You may substitute chicken or beef for the pork.

Ingredients :

2 tablespoons olive oil, divided
1/2 small onion, chopped
1 pound cooked pork roast, cut into very thin strips
1 cup grated Monterey jack cheese
1/4 cup green salsa
1 jalapeno pepper (optional), seeded and finely chopped

1/4 cup chopped fresh cilantro
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
Atkins whole wheat tortillas

Tomato salsa

Instructions

Heat oven to 450°F. Heat 1 tablespoon of the oil in large skillet over medium-high heat. Cook onion 5 minutes, until softened. Transfer to a bowl. Add pork, cheese, green salsa, jalapeno , cilantro, pepper and salt. Mix well. Brush one side of each tortilla with remaining oil. Spoon one-eighth of pork mixture over half of non-oiled side. Fold tortilla in half over filling. Arrange on a baking sheet. Bake 5 minutes, until crisp and golden. Serve with tomato salsa.
